Leviathan Hospitality is a Miami-based hospitality consulting firm advising restaurants, bars, hotels, and food and beverage brands on strategy and operations. We work with owners, operators, developers, and investors who are opening a new concept, fixing an underperforming one, or preparing to grow.
Our work covers concept development, pre-opening planning, operational assessments, financial and profitability analysis, menu development and engineering, service standards, leadership recruitment, AI strategy for hospitality businesses, and ongoing executive advisory. We also write the core documentation an operation runs on, including operations manuals, kitchen bibles, and bar bibles.
We advise restaurants and bars, hotels and resorts, private clubs, wellness concepts and branded residences, franchise and emerging brands, food brands, and hospitality investors and developers.
Leviathan was founded in 2016 by Daniel Levine. His operating career includes serving as VP of Operations at Joe’s Stone Crab, the top grossing independent restaurant in the country, COO of Kiki Group, and VP of Food and Beverage at Life House Hotels, with earlier years at Hillstone. He also founded, built, and sold Dasher & Crank, named Best Ice Cream in Florida by Food & Wine. He has developed more than 20 concepts, and work from that portfolio has been recognized by the Michelin Guide, Boston Magazine, 5280, and Miami New Times.
That background means our advice comes from an owner and operator’s point of view. Recommendations are specific, tied to the numbers, and built to hold up on a busy Saturday night.

Founder Daniel Levine has spent nearly two decades in restaurants and hotels, rising from early restaurant jobs to executive roles, and built and sold a brand of his own.
