My company works with  hospo and retail clients doing one specific thing... finding more profit - I know this sounds like an obvious goal but in my experience less than 10% of micro, small and medium businesses have visibility around if they are actually making money on a daily, weekly and monthly basis -  what I implement is laughably simple and it's exactly the same for $10k revenue per week businesses right up to $25 million per year revenue companies.
I simply take the data they already have and present it in a way that lets them predictively see what is happening in their business before it happens... giving them the tools to tweak labour, cogs etc to generate an extra 3-10% net profit. I can only work with 8 or so clients at any one time. 
apex have helped me systemise this - turn my SOPs in to a software product that can be used by thousands of businesses instead of 8. Dramatically decreasing the cost for each client and exposing pretty much any customer facing business to a proven profit increasing model

Easy question to answer - Apex AI developers are smart! Feel like business running partners and not just some bloke in an unknown country just executing your requests. They are invested, have opinions, drive the project like a proper consultant.
